Recommend me some medieval music. Preferably on acoustic/traditional instruments. It's hard to describe what I mean since I know dick about this subject, but I'm looking for stuff that is similar to this:

Not even remotely metal related, but Italian artist Angelo Branduardi is responsible for some of the most incredible medieval-sounding melodies I've ever heard:

Yes JORDI SAVALL with his ensemble Hesperion XX (composed of members of his family) is the real deal playing authentic Renaissance/late Medieval music from real composers of those times on real instruments of those times.
Not some phony pseudo medieval music for fans of D&D
JORDI SAVALL is a passionate genius who has alone resurrected Renaissance music, both profane and religious, unearthing dusty and forgotten musical sheets and pieces and musical techniques of that time.

Along with TEITANBLOOD and Down With The Most High oversized leather patches the BEST thing that came outta Spain

Obsequiae are pretty cool for a contemporary take on "medieval" music. For another take, try AOI. I ran across them completely randomly on a split release called The Black Hours and I was pleasantly surprised.

Additionally, try the German band Estampie, which approaches the idea of medieval music much the same way Dead Can Dance does:

If you want to really delve into historical accuracy, you'll be better looking for specific styles. Just to be confusing, "estampie" is also a kind of music, and I've run across some very good recordings of modern musicians playing traditional estampie music.

I do agree with Jordi Savall being one of the greatest artists in Spain (Catalyuna to be more precise), but you never HEARD BARON ROJO for sure.

Let's add ENSEMBLE SEQUENTIA! Their works are truly astounding and the CDs of them I have are played again and again here.

Don't know if it counts as medieval or not, but Alan Stivell's "Renaissance Of The Celtic Harp" is a killer album.
