Negura Bunget and Dordeduh first come to mind. They use a whole bunch of different folk instruments, namely nai, hammered dulcimer, toacă, tulnic, a range of percussions etc.

Peste Noire uses harmonica, accordion and/or hurdy gurdy in some songs.

There's some ocarina in Filii Nigrantium Infernalium debut demo. Sounds wicked!

anyone know of any marimbas or steelpans in metal? Is there a Jamaican BM scene?
not a joke, just interested to know if there is or not.

There's a jamaican "BM" band called Orisha Shakpana (or something like this) but it's an abomination

BAXAXAXA used a theremin on the last song of their set. Was not expecting it, very eerie sound. I don't think there is one in the demo recording, however.

https://en.wikipedia.org/wiki/Damaru - "orthodox" drum is made not of wood, but 2 half of human skulls (male & female). Also this - https://en.wikipedia.org/wiki/Kangling Both are used, for example, by PHURPA. Would be very surprised if idea of using them haven't been stolen yet by some cult of fire chapiteau.

Black Flag used one a few years ago and it was the icing on the shittiest show ever cake. it has pretentious written all over it.

Local band Vickers plays what appears to be an amplifier's reverb coil attached to an axe:
